Co-op unveils healthy, sustainable Summer line of to-go options

UK retailer the Co-op has launched its new Summer food-to-go range of products that are more healthy and more sustainable, thanks to the introduction of more vegan options and reduced packaging.

The elimination of plastic cutlery is just one of the many environmentally friendly moves the chain is making, which includes getting rid of 274 tonnes of unneeded coverings, containers and utensils. Wooden sporks will be included instead.

“We’re really pleased that we’ve managed to remove a significant amount of plastic, cardboard and film on our food-to-go products, which will reduce the amount of packaging in our stores,” Robert Thompson, Packaging Manager at the Co-op, said. “Teams have worked hard to deliver what is a really positive step forward for packaging, delivering the same fantastic sandwiches and salads as sustainably as possible.”

In addition to the positive sustainable lean, the Co-op also is delivering to-go items that also appeal to customers. It is reducing meat on its Summer range, keeping it light and healthy with eight new vegan and vegetarian products on the way. In addition to sandwiches and salads, wraps and sushi will be featured as the retailer unleashes a globally inspired menu of items.

Those include Thai Bang Bang Noodle Salad, Chicken Katsu Bento Box, Halloumi Flatbread, Spinach and Pine Nut Falafel Wrap and the Coronation Chicken Sub Roll. Sushi products includes a Vegan taster pack.

“We’ve added a wide range of products to our food-to-go section this summer, perfect for all types of lunches,” Sam Griffiths, Product Development Manager at the Co-op, said. “Influenced by traditional rolls from Japan, we’re particularly excited about our new the range of sushi.”
